Ingredients:
2 cups shredded carrots
2 tsp. olive oil (love this quality brand here)
Juice from ½ lemon
¼ tsp. ground cinnamon
¼ tsp. ground ginger
Pinch of sea salt
2 pitted Medjool dates, finely chopped
2 tbsp. chopped cashews
Step 1: Start by washing your carrots and pat dry. Grate and set aside.
Step 2: Combine the shredded carrots and olive oil.
Step 3: Squeeze in the lemon juice and add the cinnamon, ginger, and salt. Toss to combine.
Step 4: Fold in the chopped dates and cashews and mix well.
Step 5: Split into two servings and enjoy right away!
