A Whole Foods Detox Salad: The Perfect Lunch
Need some color in your life? Build your next meal around a fresh, vibrant salad full of detoxifying ingredients. Thanks to the flavors of tahini, lemon, and maple syrup, this kale and carrot salad is totally crave-worthy.
Interestingly, the calcium in kale may be more bioavailable than the calcium found in cow’s milk. (1) This means your body is better able to utilize it, especially when combined with vitamin D (if you have a good vitamin D supplement, take it along with this salad). Calcium can help improve liver health, and therefore also your ability to detoxify and revitalize yourself. (2)
This salad also includes thinly shaved Brussels sprouts. Brussels sprouts add crunch and color, as well as the essential mineral sulfur, which may help your body shed heavy metals and other toxic substances by supporting liver function. (3) If you’ve never had raw Brussels sprouts before, you may find that this is your new favorite way to enjoy them!

What Is a Detox Salad?
Detox salads are a popular type of recipe and menu item today. They’re high fiber salads packed with vegetables, fruit, seeds, nuts, and healthy fats. Free of common allergens, they make for a great lunch or light dinner, or a nourishing side dish to serve with a hot meal. You can always add a protein source to your salad to make it more filling. Roasted chickpeas would be a delicious addition to this recipe.
The best detox salads often emphasize cruciferous vegetables like leafy greens, cabbage, cauliflower, and broccoli. Consumption of cruciferous vegetables may support immune health and effective detoxification. (4) This kale detox salad includes two kinds of cruciferous veggies, as well as carrots and dried cranberries.
A mandoline slicer or food processor will speed up prep, but you don’t need one.
Carrot Kale Brussels Sprouts Salad Recipe
Serves 4 generously
Ingredients: (Click here to print!)
2 tablespoon balsamic vinegar
2 tablespoons olive oil (get my favorite quality brand here)
2 tablespoons tahini
2 tablespoons lemon juice
2 tablespoons maple syrup
1 small bunch kale, destemmed and thinly sliced
1 lb. Brussels sprouts, trimmed and very thinly sliced or shredded
2 large carrots, peeled and shredded
1/2 cup unsweetened dried cranberries
Salt and pepper to taste
Step 1: Combine vinegar, oil, tahini, lemon juice, and maple syrup in a medium-sized jar. Seal tightly and shake until dressing is emulsified.
Step 2: Place salad ingredients in a large bowl and add all of the dressing. Combine well and season with salt and pepper to taste. Enjoy immediately or keep for up to three days in the refrigerator.
