Cherries are deeply nutritious - not to mention colorful and delicious.
Each 8 ounce serving provides three grams of dietary fiber. (1) This fiber can be fermented by the bacteria in your gut to produce the short-chain fatty acids (SCFAs) necessary to keep the cells that line your colon healthy. (2) Some research indicates that SCFAs can also help regulate the metabolism and minimize the development of inflammation and disease. (3)
Raw cherries make a great snack, but we love to combine them with other nourishing whole food ingredients to make a comforting cobbler. Lemon juice and arrowroot powder add dimension and flavor to the filling in our cobbler recipe. The crisp, gently-spiced topping is made with almond flour, sliced almonds and shredded coconut, maple syrup, and coconut oil.
This cobbler is gluten-free and dairy-free. Almonds and coconut provide healthy fats, fiber, and important minerals like manganese, shown to improve bone health and support a healthy metabolism. Gluten-Free Cherry Cobbler
Serves 6
Ingredients:
1 cup almond flour
½ cup sliced almonds
½ cup shredded unsweetened coconut
¼ cup virgin coconut oil, melted
2 tablespoons maple syrup
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 teaspoon vanilla extract
¼ teaspoon sea salt
1 ½ lbs. fresh sweet cherries, pitted (you can substitute sour cherries - add additional sweetener to the filling if you do)
1 tablespoon arrowroot powder or cornstarch
Juice of 1 lemon
Dairy-free ice cream, whipped cream, or unsweetened coconut cream, for serving (optional)
Directions
Step 1: Preheat the oven to 375°F. In a large bowl, stir together almond flour, almonds, coconut, coconut oil, maple syrup, cinnamon, nutmeg, vanilla, and salt. Place cobbler topping in the refrigerator while you prepare the filling.
Step 2: In another large bowl, gently toss together cherries, arrowroot, and lemon juice. If using sour cherries, add additional sweetener to taste. Transfer filling to a 9” glass baking dish.
Step 3: Sprinkle cobbler topping over filling and bake for 45-60 minutes, or until topping is browned and filling is bubbly and thickened. Cover topping with foil if it browns too quickly.
Serve the cobbler warm with ice cream or whipped cream, if desired. Store any leftovers in an airtight container in the refrigerator for up to five days. Reheat in the oven.
